2-Ingredient Plain Bagels

Healthy bagels that don’t taste like cardboard and the smell of fresh baked bread in my home? I’m all about it.  Bring it on.

Ingredients:

  • 1 1/8 cups self-rising flour
  • 1 cup of full-fat plain Greek yogurt

Directions:

  1. Preheat your oven to 350 degrees.
  2. Combine your self-rising flour and Greek yogurt in a mixing bowl and knead for 2-4 minutes until dough comes together (it should feel a little sticky.)
  3. Line a cookie sheet with parchment paper and generously coat with cooking spray.
  4. Shape your dough into a disc, and use a knife to cut dough into four equal sections.
  5. Roll each section into a small ball and flatten to 1/2-inch thickness. Using your fingers or the back of a spoon, hollow out the center of your bagel.
  6. Spray the tops of your bagel with cooking spray. Sprinkle with salt, sesame seeds, Everything Seasoning (I get mine from Trader Joes) or poppy seeds if desired.
  7. Bake for 20-25 minutes until golden brown.

Cinnamon-Raisin Bagels

Ingredients:

  • 1 1/8 cups self-rising flour
  • 1 cup of full-fat plain Greek yogurt
  • 2 Tbsp. raisins
  • 1/2 tsp cinnamon

Directions:

  1. Preheat your oven to 350 degrees. Combine all ingredients together in a mixing bowl and knead for 2-4 minutes until dough comes together (it should feel a little sticky.)
  2. Line a cookie sheet with parchment paper and generously coat with cooking spray.
  3. Shape your dough into a disc, and use a knife to cut dough into four equal sections.

Rosemary-Garlic Rolls

Ingredients:

  • 1 1/8 cups self-rising flour
  • 1 cup of full-fat plain Greek yogurt
  • 2 cloves garlic
  • 1 sprig of fresh rosemary
  • Sea salt

Directions:

  1. Preheat your oven to 350 degrees.
  2. Remove papery skin from garlic and use a microplane to zest your garlic cloves.
  3. Remove leaves from rosemary and give them a coarse chop.
  4. Combine all ingredients together in a mixing bowl and knead for 2-4 minutes until dough comes together (it should feel a little sticky.)
  5. Line a cookie sheet with parchment paper and generously coat with cooking spray.
  6. Shape your dough into a disc, and use a knife to cut dough into eight equal sections.
  7. Roll into small balls.
  8. Spray the tops of your rolls with cooking spray, and sprinkle with sea salt.
  9. Bake for 18-20 minutes until golden brown.
