Antipasto Chicken Sandwich

Ideal for a quick weeknight dinner or a picnic lunch, this warm, melty sandwich pairs well with sliced fruit or a bunch of grapes. Purchase roasted chicken breasts to save on preparation time.

  1. Spread bottom half of focaccia with pesto.
  2. Arrange chicken on top of paste.
  3. Arrange artichokes, tomatoes, peppers, and prosciutto or ham over chicken.
  4. Top with cheese.
  5. Top with top half of focaccia; press gently.

Cooking Options:

  1. Heat a large nonstick skillet over medium heat. Add sandwich to pan. Place a cast-iron or heavy skillet on top of sandwich; press gently to flatten.
  2. Cook 2 minutes on each side or until bread is lightly toasted (leave cast-iron skillet on sandwich while cooking).
  3. Cut into 4 wedges.

 

  1. Alternately you can wrap the sandwich with foil and bake at 350 degrees for 15 minutes with a heavy pan or brick on top.  Remove foil and serve.
