
Avocado Chicken Salad
Ingredients
- 2 large cooked chicken breasts shredded or chopped (or pulled from a rotisserie chicken)
- 1 large avocados
- 1 cup corn, frozen and thawed
- 1/2 cup red onion, diced
- 6 oz bacon pieces
- 1/4 cup cilantro
- 2 Tbsp lime juice
- 2 Tbls Olive Oil
- 1 tsp salt
- 1/2 tsp pepper
Directions:
- In a large bowl, combine all the ingredients and let the flavors meld for 1 hour in the refrigerator before serving (if time allows.)
- Serve over a bed of baby spinach leaves, sprialized zucchini, quinoa, in a whole wheat wrap or all by itself
