Avocado Chicken Salad

 Easy, excellent chicken salad with lime dressing, plenty of avocado, irresistible bites of bacon and corn.
Yields: 6 Servings


  • 2 large cooked chicken breasts shredded or chopped (or pulled from a rotisserie chicken)
  • large avocados
  • 1 cup corn, frozen and thawed
  • 1/2 cup red onion, diced
  • 6 oz bacon pieces
  • 1/4 cup cilantro
  • 2 Tbsp lime juice
  • 2 Tbls Olive Oil
  • 1 tsp salt
  • 1/2 tsp pepper


  1. In a large bowl, combine all the ingredients and let the flavors meld for 1 hour in the refrigerator before serving (if time allows.)
  2. Serve over a bed of baby spinach leaves,  sprialized zucchini, quinoa, in a whole wheat wrap or all by itself
