Beef, Cabbage and Tomato Soup (Instant Pot or Stove Top)

Ingredients:

  • 1 1/2 lbs 90% lean ground beef
  • 2 teaspoon kosher salt
  • 1 tablespoon minced garlic
  • 1  onion, diced
  • 1 cup diced celery
  • 1 cup diced carrot
  • 28 oz can diced or crushed tomatoes or tomato sauce
  • 6 cups chopped green cabbage (one whole head)
  • 5 cups beef broth
  • 3 cups frozen green beans (no need to thaw)

Directions for Instant Pot:

  1. For the Instant Pot, press the saute button and let the pressure cooker get very hot, when hot spray with oil, add the ground beef and salt and cook until browned breaking the meat up into small pieces as it cooks, 3 to 4 minutes.
  2. When browned, add garlic, onion, celery and carrots and saute 4 to 5 minutes.
  3. Add the tomatoes, cabbage, green beans, beef stock and bay leaves, lock the lid cook high pressure with the valve set to “sealing” for 20 minutes.
  4. Let the steam release naturally.

Directions for the Stove Top:

  1. For the Stove Top,  oil a large stock pot and add the ground beef and salt and cook until browned breaking the meat up into small pieces as it cooks, 3 to 4 minutes.
  2. When browned, add garlic, onion, celery and carrots and saute 4 to 5 minutes.
  3. Add the tomatoes, cabbage, green beans and beef stock.
  4.  Cook covered low 40 minutes. Remove Bay leaves and serve.
