Butternut Squash Hummus

This hummus-like spread has the same smooth and creamy texture as the traditional stuff, with a touch of added sweetness from the butternut squash. Serve it with whole grain pita chips or sliced veggies, or spread it on sandwiches.

Yields: 6 Servings
Total Time: 10 minutes


  • 10 ounces frozen butternut squash cubes, thawed
  • 1/3 cup tahini (sesame seed paste)
  • 1 tablespoon orange zest
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 2 tsp minced garlic
  • salt and pepper to taste

Put the squash in a food processor and puree until completely smooth. Add the tahini, orange zest, oil, cumin, paprika, and garlic. Blend until well combined. Season to taste with salt and pepper.
