Chicken and Black Bean Burrito Bowl – 21 Day Fix Approved

Who does not like a classic chicken taco salad?  Prep the rice mixture in advance and purchase a rotisserie chicken to pull apart and use for this recipe or simply use leftover chicken from earlier in the week.  In 30 minutes you have 4 meals prepped for the week.

Portion Fix Container Equivalents: 1 red, 1 green, 1½ yellow, 1 blue

Yields: 4 servings, 1 bowl each

  • 2 cups cooked brown rice, warm
  • 2 Tbsp. fresh lime juice
  • 1/4 cup. finely chopped fresh cilantro
  • 1 tsp. salt and pepper
  • 3 cups chopped romaine lettuce
  • 1 cup black beans, drained
  • 2¼ cups shredded cooked chicken breast, warm
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup fresh tomato salsa
  • ½ medium avocado, sliced
  • ½ cup reduced-fat (2%) plain Greek yogurt

Ingredients:

  1. Combine rice, lime juice, cilantro, salt and pepper in a medium bowl; mix well. Set aside.
  2. Evenly divide lettuce between four serving bowls (or 4 tightly sealing tupperware if meal prepping)
  3. Top evenly with rice mixture, beans, chicken, cheese, salsa, and avocado
  4. Top each bowl with 2 Tbsp. of Plain Greek Yogurt (or place on the side in a small covered container if eating later.)
