Cilantro Lime Chicken with Tomato Avocado Salsa

A simple cilantro-lime marinade that can be for 5 minutes or overnight is all that’s needed to deliver big flavor to chicken breasts.  Top with fresh avocado and you have yourself a healthy dose of fresh flavors. Serve with saffron rice.

4 servings (serving size: 1 chicken breast half and about 1/4 cup salsa)
  1.  Transfer chicken to a gallon-size resealable plastic bag, seal and pound thicker parts of the chicken to an even thickness.
  2. Add the cilantro, lime juice, garlic, and olive oil to the bag.  Seal the bag while pressing the air out, then rub marinade over chicken. Allow the chicken to rest in refrigerator 2 – 4 hours (rotating the bag and moving the chicken around to ensure it’s evenly marinating)
  3. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt.
  4. Heat a grill pan or skillet over medium-high heat. Coat pan with 2 tsp. olive oil. Add chicken to pan; cook 6 minutes on each side or until done.
  5. To prepare salsa, combine tomato and next 4 ingredients (through pepper) in a medium bowl. Add avocado; stir gently to combine. Serve salsa over chicken.
