Creamy Mashed Cauliflower
A perfect low carb alternative to mashed potatoes with a creamy buttery taste. If you don’t have buttermilk you can make it with 1/3 cup milk and add 2 tsp.. lemon juice or vinegar and let it rest for a few minutes until curdled.
- 1 medium head cauliflower, cut up into florets
- 4 tsp. minced garlic
- 1/3 cup 1% buttermilk (milk with 2 tsp. lemon juice or vinegar added)
- salt and pepper to taste
- 1 tbsp butter
Boil cauliflower until soft very soft. Drain, add garlic, buttermilk, butter, salt, pepper and mix with a hand mixer.
Tip: If you are serving a crowd and need more volume I will sometimes add a few potatoes to my cauliflower and cook until they are both tender. Then follow directions above.
