Herb Crusted Pork Tenderloin
A handful of herbs and a little time in the oven will transform your plain pork loin into a masterpiece. Big flavor & little effort! This is a basic herb rub that can be applied any number of meats. If you’re not into pork, try chicken breasts or even a beef roast. It’s simple yet oh so flavorful!
- 2 lbs pork tenderloin
- 3 Tbls. minced garlic
- 1 tsp dried basil
- 1 Tbls. dried thyme
- 1 tsp dried rosemary
- 1 Tbls. dried oregano
- 2 tsp. black pepper
- 2 tsp salt
- 1/4 cup olive oil
Preheat the oven to 425 degrees. Combine all the dry ingredients in a food possessor and pulse.
Add olive oil to the herb mixture.
Place the pork loin on a baking sheet covered with foil. Rub the oil and herb mix over the entire surface of the pork (including underneath). At this point you can store it in the refrigerator to marinate for 30 minutes or up to a day.
Place the pork loin on a baking sheet (covered with foil for easy cleanup, if desired).
Roast in the oven for 25-35 minutes or until the internal temperature reaches 145 degrees.
Allow the pork loin to rest for ten minutes before slicing.
