
Instant Pot Mashed Cauliflower and Sweet Potatoes
Instant Pot cauliflower and sweet potatoes mash up. One pot to steam. One pot to blend. One family to serve

Ingredients
- 1 cup water
- 4 medium sweet potatoes, with peels on
- 1 head of cauliflower, cored and cut into bit size pieces
- 4 Tbsp. butter
- 2 tsp. salt
- 1/2 cup milk or Greek Yogurt
Directions

Place steamer basket in Instant Pot and add 1 cup water.

Scrub sweet potatoes until skins are clean. Pierce with a fork a few times.

Cut up Cauliflower and place sweet potatoes and cauliflower on top of the steamer basket.

Cover and place vent on lid to “Sealed”.

Set on “Manual” program and set time for 15 minutes.

When finished cooking, don’t open lid. Allow pressure to reduce naturally, about for 5 minutes and then quick release.

Remove lid and top with butter, salt and milk (or Greek Yogurt)
- Mash vegetables to the consistency of your liking. Salt according to taste.
