Lime and Jalapeno Slaw

This citrusy take on coleslaw is fresh and pleasantly spicy, making it an ideal side dish or burger or brat topping. Seed all the peppers  for a milder dish.

Yields: 8 servings

Directions:

  1. Combine first 4 ingredients in a large bowl, stirring with a whisk.
  2. Gradually add olive oil, stirring constantly with a whisk.
  3. Add onion, cilantro, and coleslaw.
  4. Cut jalapeno in half crosswise, discarding the top. Remove seeds. Cut into thin rings/slices or finely dice.
  5. Add the jalapeños to onion mixture, and toss well to coat.
  6. Cover and chill at least 1 hour.
