Mediterranean Veggie Pita

Craving a fast and healthy lunch? This simple sandwich packs a lot of flavor and nutrition, which makes it ideal for an easy weekday meal. I love stuffing pantry staples or leftovers into a pita pocket and calling it good. Simple, fast and satisfying. Who has time for much more?

Yields: 1 sandwich


  • 1 (4 inch) whole wheat pita
  • 1/4 cup prepared hummus
  • 1/4 cup diced cucumbers
  • 1 cups baby spinach
  • 1/2 cup cherry tomatoes
  • 1/4 cup pepperoncini rings
  • 5 pitted kalamata olives
  • 2 Tbls. feta cheese crumbles


  1. Fill the pita with hummus and remaining ingredients.
  2. Serve with grapes and carrots.
