
Mediterranean Veggie Pita
Craving a fast and healthy lunch? This simple sandwich packs a lot of flavor and nutrition, which makes it ideal for an easy weekday meal. I love stuffing pantry staples or leftovers into a pita pocket and calling it good. Simple, fast and satisfying. Who has time for much more?
Yields: 1 sandwich
Ingredients:
- 1 (4 inch) whole wheat pita
- 1/4 cup prepared hummus
- 1/4 cup diced cucumbers
- 1 cups baby spinach
- 1/2 cup cherry tomatoes
- 1/4 cup pepperoncini rings
- 5 pitted kalamata olives
- 2 Tbls. feta cheese crumbles
Directions:
- Fill the pita with hummus and remaining ingredients.
- Serve with grapes and carrots.
