
Pico De Gallo Salad
Pico de Gallo Salad with lime, onions, tomatoes and jalapenos is a quick, easy, FAT FREE side dish for your favorite Mexican recipes. You can prep this ahead and leave it in the refrigerator for up to 4 days to serve along side grilled fish, chicken, beef or shrimp. You can even use it to top salads, fill wraps or go on top of scrambled eggs.
Yields: 4 servings
Ingredients:
- 2 scallions, sliced thinly
Directions:
- Add all the ingredients together in the bowl except for the tomatoes and stir well.
- Add in the tomato chunks and combine gently.
- Let sit for 30 minutes for the best flavors.
