
Pineapple Cauliflower Fried Rice
- 1 head cauliflower (cut into florets)
- 1 T. sesame seed oil
- 1 T. minced Ginger
- 3 T. Green onions, diced
- 1 bell pepper, diced
- 3 T. minced garlic
- 1 cup carrots, diced
- 1 cup peas
- 1 cup diced pineapple
- 1 cup cashews
- 3 T soy sauce
Instructions
- In a food processor, pulse the cauliflower florets into a rice-like consistency. Transfer cauliflower to a large saute pan that has been heated with 1 T. sesame seed oil on medium heat. Stir often and cook until the cauliflower rice looks a little toasty. About 5 minutes.
- Then add in the remaining ingredients, cover and cook about 5 minutes.
- Remove from heat and serve.
This should last at least 4 days in the fridge. You can add cooked shrimp, chicken or pork to up the protein for this delicious salad. Enjoy!
