Roasted Garlic Asparagus and Mushrooms

The perfect vegan side dish to any meal. Serve with chicken breast or salmon for a complete meal.

Yields: 6 servings


  • 2 bunchs of asparagus
  • 10 large white mushrooms, washed & sliced ( or keep whole if you prefer)
  • 2 tablespoon olive oil
  • 2 tsp. minced garlic
  • salt and pepper to taste


  1. Preheat oven to 450 F.
  2. Wash and prepare the vegetables. Cut off woody ends of the asparagus and cut into 2 inch pieces. Add to a medium-sized roasting pan.
  3. Slice mushrooms and add to pan.
  4. Add garlic, salt and pepper. Drizzle olive oil and toss to coat.
  5. Roast for 15 minutes.
