Rosemary Slow Cooker Chicken and Potatoes

Not only is this dish really fast to throw together, the leftovers are really versatile.

  1. Peel and cut potatoes in 1 inch pieces.
  2. Place in slow cooker.
  3. Mix garlic, rosemary, salt, pepper. Mix well.
  4. Coat the chicken breasts with the seasoning mixture.
  5. In a large skillet, heated on medium-high heat, a 2 tsp of oil and sear chicken for 2 minutes on each side (this is optional if you want your chicken to have a golden crust)
  6. Place chicken on top of the potatoes in the slow cooker
  7. Combine olive oil, wine, lemon juice and Chicken Broth and pour over the chicken
  8. Cover a cook on low for 6-7 hours and high for 3-4 hours.
  9. Transfer chicken to a platter and tent loosely with foil.
  10. Remove 1/2 cup cooking liquid from slow cooker; place in a small bowl. Whisk in flour until no lumps remain.
  11. Pour flour mixture back into slow cooker and whisk until smooth. Turn heat to high and cook, uncovered and stirring occasionally, until thickened, about 15 minutes.
  12. Taste and adjust seasoning if necessary. Drizzle sauce over chicken and serve with rice, mashed potatoes or egg noodles, if desired.
