Freezer to Sheet Pan Chicken Fajitas

These sheet pan fajitas are brimming with those Mexican flavors we can’t get enough of, they’re a breeze to throw together, and clean up couldn’t be easier!

Yields: 4 – 6 servings

Ingredients

Seasoning

  • 2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground coriander
  • Salt and freshly ground black pepper

Fajita filling

  • lbs boneless skinless chicken breasts , sliced into 1/2-inch thick strips 
  • 1 of each red , green and yellow and orange bell peppers, cored and sliced into strips (4 whole total)
  • 1 medium red onion , halved and sliced vertically
  • 2 tsp. minced garlic
  • 3 Tbsp olive oil
  • 3 Tbsp fresh lime juice
  • 3 Tbsp chopped cilantro

For serving

  • 8 taco size flour or corn tortillas
  • Sour cream , avocado slices or guacamole, diced tomatoes, Mexican cheese blend (toppings are optional)

Directions:

  1. Preheat oven to 400°F. Spray an 17 by 12-inch rimmed baking sheet with non-stick cooking spray or line with parchment paper

  2. For the seasoning: In a small mixing bowl whisk together chili powders, cumin, paprika, coriander, 1 1/2 tsp salt and 1/2 tsp pepper, set aside.
  3. Spread bell peppers and yellow onion onto baking sheet.
  4. Top with chicken strips then sprinkle garlic and seasoning evenly over chicken strips.
  5. Drizzle olive oil over top then toss everything to evenly coat. Spread into an even layer working to keep chicken from overlapping.
  6. Roast in preheated oven, tossing once halfway through cooking, until veggies are tender and chicken has cooked through, about 18 – 25 minutes
  7. Wrap tortillas tightly in foil and warm in oven during last 5 minutes of fajita filling cooking.
  8. Drizzle lime juice evenly over top of the chicken fajita filling, sprinkle with cilantro and more salt to taste and toss to coat.
  9. Serve filling warm in warm tortillas with desired toppings.

Directions to Freeze:

  1. Label your freezer bag with the name and meal and cooking instructions
  2. Add all the ingredients to the freezer bag except tortillas and toppings.
  3. Remove as much air as possible, seal and lay flat in the freezer

Directions to Cook in Oven from Freezing:

  1. The night before cooking move frozen bag to your refrigerator to thaw.
  2. Heat Oven to 400 degrees.
  3. Pour contents onto a lined sheet pan
  4. Cook for 18 – 25 minutes until chicken is cooked through.
  5. Wrap tortillas tightly in foil and warm in oven during last 5 minutes of fajita filling cooking.
  6. Drizzle lime juice evenly over top of the chicken fajita filling, sprinkle with cilantro and more salt to taste and toss to coat.
  7. Serve filling warm in warm tortillas with desired toppings.
