Simple Pumpkin Syrup
- Combine all ingredients in a large saucepan and bring to a boil over high heat. Turn heat down to medium, and bring to a simmer, stirring occasionally to keep the sugar from burning.
- Let the mixture continue to simmer until it thickens up to become a syrup and begins to coat the spoon for about 10-15 minutes. You will know it’s about ready when it starts to bubble and get thick. Remove from heat.
- Let come to room temperature, and refrigerate in a sealed container.
Tip: The syrup will thicken a bit in the refrigerator and will become syrup again when heated in the microwave for 20-30 seconds. If the syrup is too thick you add water to thin it to your liking.
To make a Pumpkin Spice Latte:
Pour 2 – 3 Tablespoons of pumpkin syrup in a mug with 2 -3 Tablespoons of milk of choice (I use unsweetened almond milk). Whisk. Microwave on high for 45 seconds. Add hot strong coffee to the top, whisk well to combine and enjoy!
Options: You can drink this syrup mixed into a warm or cold mug of milk of your choice without adding coffee. It is also good over pancakes, drizzled on toast or in oatmeal.
