Slow Cooker Italian Chicken and Sweet Potatoes

Serve the chicken breasts over a spoonful of the mushrooms and sweet potatoes. If you don’t like mushrooms you could sub green beans, broccoli or cauliflower.This is a whole meal in and of itself but you can serve it over quinoa or pasta as well. (Courtesy of SkinnyMs.)

Yields: 4 servings


  • 4 boneless skinless chicken breasts, (optional, 2 pounds of dark meat or a combination)
  • 8 ounces cremini mushrooms, halved
  • 2 cups diced sweet potatoes
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 2 tsp. minced garlic


  1. Place the chicken in middle of the slow cooker, then put the sweet potatoes on one side and the mushrooms on the other. In another bowl, whisk the remaining ingredients together, then pour over the ingredients in the slow cooker.
  2. Cover and cook for 4 to 6 hours on low or 3 to 4 hours on high.
