Slow Cooker or Instant Pot Moroccan Beef and Sweet Potatoes

We all need more slow cooker action in our lives to make dinner time a little easier, right? This recipe is easy on prep and huge on flavor, plus it’s a one pot meal! Serve over cauliflower rice.

Yields: 4-6 servings

  • 2 lbs Boneless Chuck Roast
  • 1 large sweet potato, chopped in 1-inch pieces
  • 1 large yellow onion, chopped
  • 4 lemon slices
  • 4 orange slices

Spice Rub

  • 1/4 tsp. ceyenne pepper
  • 1/4 tsp. ground cloves
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 1 tsp cinnamon
  • 1/2 tsp black pepper
  • 1 tsp sea salt
  • 1 tsp ground cumin
  • 1 tsp. coriander

Slow Cooker Directions:

  1. Chop the onion + sweet potato into large bite-sized pieces. Line the bottom of the slow cooker with the onion.
  2. Mix all the ingredients for the Spice Rub in a small bowl
  3. Trim the fat from the Beef and rub the spice rub all over but leave a little of the marinade in the bowl.
  4. Transfer the beef to the slow cooker.
  5. Toss the sweet potatoes and onion with the remaining marinade, then scatter them over the beef in the slow cooker.
  6. Top with lemon and orange slices
  7. Cook in the slow cooker on LOW for 6-7 hours. The beef is done when it can easily be shredded with two forks.
  8. Serve over Cauliflower Rice or Quinoa

Instant Pot Directions:

  1. Chop the onion + sweet potato into large bite-sized pieces.
  2. Turn Instant Pot to Saute and coat the bottom of the pot with 2 Tbls. Olive oil. Saute the sweet potatoes and onions until brown.  Remove vegetables from the instant pot.
  3. Meanwhile, mix all the ingredients for the Spice Rub in a small bowl.
  4. Trim the fat from the Beef and rub the spice rub all over but leave a little of the marinade in the bowl.
  5. Transfer the beef to the Instant Pot and Saute until brown on all 4 sides.
  6. Toss the sweet potatoes and onion with the remaining marinade, then scatter them over the beef in the Instant Pot.
  7. Top with lemon and orange slices
  8. Push “Cancel” and then select “Manual” and set the timer to 30 minutes.  After 30 minutes slow release for 10 minutes. The beef is done when it can easily be shredded with two forks.
  9. Serve over Cauliflower Rice or Quinoa
