
Healthy Vegan Vodka Pasta Sauce
A creamy, tangy, luscious, and SUPER easy take on vodka pasta – and vegan!
Yields: 4 servings
Ingredients:

4 cups whole wheat penne, dry

1/4 cup olive oil

1/2 white onion, diced

8 cloves garlic, diced
-
1/2 cup tomato paste
-
2 tsp vodka
-
1 cup unsweetened plain almond milk (or non-dairy milk of choice)

1/2 cup full fat coconut milk
-
2 tsp. red pepper flakes
-
1/2 cup reserved pasta water
-
1 tsp. salt
-
2 handfuls of spinach or fresh basil

6 Tbsp. nutritional yeast (or parmesan cheese if using dairy)
Directions:

Cook pasta according to package directions, reserving 1/2 cup of the pasta water before draining.

In a pan over medium heat, heat the olive oil and saute the diced onion and garlic until translucent, about 3 minutes.

Add the tomato paste and stir, followed by the vodka, almond milk, and coconut milk. Mix until a sauce if formed then stir in the red pepper flakes, salt and pepper.

Pour in the reserved pasta water and cooked penne to the pan. Stir the pasta until it is coated, adding your handfuls of spinach at the end.

Serve immediately with nutritional yeast (or parmesan cheese) on top and add salt and pepper to taste.
